FSSC 22000 when the customer demands GFSI

The scheme is ISO 22000 plus a specified prerequisite standard plus additional requirements, and the third part is where the work is.

You and your certification body

FSSC 22000 is a certification scheme built on ISO 22000, a sector prerequisite programme standard from the ISO 22002 series, and the FSSC additional requirements. Unlike ISO 22000 on its own, it is recognised by GFSI, which is why retailers and global brands write it into contracts.

Two stacks on a shared ISO 22000 base. The left is ISO 22000 alone with prerequisite programmes required but not specified and no additional requirements. The right adds the ISO 22002 prerequisite standard and the FSSC additional requirements, and carries GFSI recognition.NOT GFSI RECOGNISEDNO ADDITIONAL REQUIREMENTSTHE LAYER THAT IS NOT THEREPRPS REQUIRED, NOT SPECIFIEDYOU CHOOSE AND JUSTIFY THEMISO 22000:2018WITH AMENDMENT 1:2024WHAT FSSC ADDSGFSI RECOGNISEDFSSC ADDITIONAL REQUIREMENTSEACH WITH ITS OWN RECORDSISO 22002-100:2025PLUS YOUR SECTOR PARTISO 22000:2018THE SAME BASEISO 22000 ALONEFSSC 22000PROPORTIONATE WITHOUT A GFSI CLAUSEUNANNOUNCED AUDITS WITHIN THE CYCLENO SPECIFIED PRP STANDARDDATES COME FROM THE SCHEME OWNER

FSSC 22000 when the customer demands GFSI sits at step 4 of the readiness cycle. You receive the documented management system.

01

Where the extra effort actually lands

If you hold ISO 22000, you already have the management system. What you do not have is the third layer, and the third layer is prescriptive.

The additional requirements are not philosophy. Food defence, food fraud mitigation, allergen management, environmental monitoring, hazard control and cross-contamination prevention, food safety and quality culture, quality control, equipment management, food loss and waste, and mandatory communication of serious events to your certification body. Each one needs a plan, an owner and records from the system in use.

The prerequisite standard is the other half of the surprise. ISO 22000 requires prerequisite programmes without specifying them. The ISO 22002 part that applies to your food chain category does specify them, in infrastructure terms, and a site that was built before anyone thought about it can find itself facing capital work rather than documentation.

Then there is the unannounced audit. Within the certification cycle, somebody arrives without notice. That single requirement changes how a plant has to run, because the evidence has to be in the building every day rather than assembled the week before a visit.

What the upgrade produces

Assuming you already hold ISO 22000. If you do not, start there and this becomes one project.

01

A gap report against all three layers

Management system, prerequisite standard and additional requirements, separated, because they are closed by different people.

02

A food defence and food fraud assessment

Threat and vulnerability assessments with mitigation plans, which are documents most sites do not hold at all.

03

An environmental monitoring programme

Sampling plan, locations, frequencies, trending and the action levels that trigger a response.

04

The allergen management plan

Assessment, segregation, cleaning validation and labelling controls, joined up rather than split across three departments.

05

A food safety and quality culture plan

Objectives, activities, measurement and review. The requirement is specific and a poster does not satisfy it.

06

An unannounced audit readiness check

A walk-through on a normal day with no preparation, run the way an unannounced auditor runs it.

04

Route to the audit

  1. 01

    Confirm category and version

Your food chain category decides the ISO 22002 part. Your certificate status decides which scheme version applies to your next audit.

    Gap analysis
  2. 02

Gap the site, not just the file

The prerequisite standard is about the building as much as the paperwork, so this one is a walk.

    Two days
  3. 03

    Close the additional requirements

One owner per requirement, one plan per requirement, records starting immediately because several need history.

    Then your team runs it
  4. 04

    Run an unannounced-style check

No notice, normal day. If the evidence is not in the building, better we find it than they do.

    One day
  5. 05

    Internal audit and handover

Full internal audit against the scheme, findings closed, then you book with your certification body.

    Before the certification audit
05

Adding the scheme to an ISO 22000 plant

A food manufacturer holds ISO 22000. A multinational customer now asks it for a GFSI-recognised scheme.

The management system is already there, so the work is the delta. We gap the site against the ISO 22002 part for its food chain category, then against the FSSC additional requirements, and keep the two lists apart because different people close them.

Each additional requirement gets an owner, a plan and records that start straight away: the food defence and food fraud assessments, the environmental monitoring programme, the allergen plan and the culture plan. Version 7 was published in May 2026 and the transition is under way, so the version that applies to the next audit is read from FSSC's own transition table.

Before the internal audit we walk the plant on a normal day with no notice, the way an unannounced auditor would. The manufacturer then books with a certification body of its choosing.

Scheme questions

Q01

Is FSSC 22000 better than ISO 22000?

Broader, not better. It is ISO 22000 plus specified prerequisites plus additional requirements, and it carries GFSI recognition. If nobody in your supply chain requires GFSI recognition, FSSC buys scope you may not need and costs more to maintain.

Q02

Which scheme version applies to us?

Version 7 was published in May 2026 and the transition from version 6 is under way. The dates that matter to you depend on your certificate and your certification body's schedule, and FSSC publishes a transition table. Take the dates from that table rather than from any consultancy page, including this one.

Q03

Which ISO 22002 part do we need?

It follows your food chain category. The common requirements sit in ISO 22002-100:2025, published in July 2025, with the sector-specific part layered on top.

Q04

Can we upgrade from ISO 22000 rather than start again?

Yes. You already hold the management system, so the work is the prerequisite standard and the additional requirements. The documentation follows within a week of the gap analysis. Your team runs it, completing at least one internal audit and one management review, with the records to show them, before the certification audit.

Q05

Does FSSC require unannounced audits?

Yes, within the certification cycle. ISO 22000 certification does not. It is the requirement that most changes daily operating discipline, because it removes the week of preparation everyone quietly relies on.

Q06

Will an FSSC certificate satisfy SFDA?

It demonstrates considerably more than HACCP does. SFDA's licensing guide names a HACCP certificate specifically, and we have not seen confirmation that FSSC is accepted in its place, so confirm with SFDA before relying on it.

Find out which layer you are missing

Most sites holding ISO 22000 are two layers short and think they are one. The gap report separates them so you can price the work properly.
